Ingredients
  

  • 1 cup Mayonnaise
  • 1-2 cloves Garlic minced
  • 2 tbsp Lime Juice fresh
  • 1-2 Chipotle Peppers in Adobo Sauce chopped
  • 1 tbsp Adobo Sauce from the chipotle can
  • 1 tbsp Fresh Cilantro chopped
  • 1/2 tsp Ground Cumin
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Prepare Ingredients: Mince the garlic and finely chop the chipotle peppers.
    Set aside.
  • Combine Base Ingredients: In a medium bowl, mix the mayonnaise, minced garlic, chopped chipotle peppers, and adobo sauce.
  • Add Lime & Spices: Stir in the lime juice, cumin, salt, and pepper.
    Adjust seasoning to taste.
  • Fold in Cilantro: Gently mix the chopped cilantro into the aioli.
  • Chill & Serve: Let the aioli rest in the fridge for 30 minutes to allow the flavors to meld.
    Serve with tacos, fries, grilled meats, or your favorite dish.

Notes

  • Adjust Spice Level: If you prefer a milder aioli, reduce the number of chipotle peppers or skip the adobo sauce.
  • Flavor Enhancements: Try adding a small amount of smoked paprika or a dash of hot sauce for even more smoky or spicy flavors.
  • Storage: Store in an airtight container in the fridge for up to 4-5 days. Always stir before serving if it has been refrigerated.
