Ingredients
  

  • 3-4 medium ears of corn cut into 3-4 ribs each
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder

  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1 lime for juice and zest

Instructions
 

  • Prepare the Corn: Lay the corn cobs on a cutting board.
    Using a sharp knife, slice the corn into 3-4 ribs, depending on the size of the corn.
  • Season the Corn: In a small bowl, mix together chili powder, garlic powder, paprika, salt, and pepper.
    Brush the corn ribs lightly with olive oil, then evenly sprinkle the seasoning mixture over all sides of the corn.
  • Cook the Corn: Preheat your air fryer to 400°F (200°C). Arrange the seasoned corn ribs in a single layer in the air fryer basket, ensuring they are not overcrowded.
    Air fry the corn for 15-18 minutes, flipping halfway through, until the ribs are golden brown and crispy on the edges.
  • Top and Serve: Once the corn is done, remove it from the air fryer. Squeeze fresh lime juice over the top, then sprinkle with crumbled cotija cheese and chopped cilantro.
    For extra heat, add chili-lime seasoning or hot sauce. Serve immediately.
