These vegan waffles are a delicious and easy-to-make breakfast option, made without any dairy or eggs.

Ingredients
  

  • 1 1/2 cups 180g All-purpose flour (or gluten-free flour)
  • 2 tbsp 15g Baking powder
  • 1/2 tsp 2g Baking soda
  • 1 tbsp 7g Ground flaxseed (for flax egg)
  • 1 cup 240ml Plant-based milk (almond, oat, soy, etc.)
  • 1/4 cup 60ml Maple syrup (or sweetener of choice)
  • 1/4 cup 60g Dairy-free butter (melted)
  • 1 tsp 5ml Vanilla extract
  • 1/2 tsp 2g Salt
  • 1/4 tsp 1g Ground cinnamon (optional)

Instructions
 

  • Prepare the flax egg: In a small bowl, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water.
    Let it sit for 5 minutes to thicken.
  • Mix dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  • Mix wet ingredients: In a separate bowl, combine the plant-based milk, maple syrup, melted dairy-free butter, vanilla extract, and flax egg.
  • Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  • Heat the waffle iron: Preheat your waffle iron according to the manufacturer’s instructions.
    Grease it lightly if necessary.
  • Cook the waffles: Pour enough batter into the preheated waffle iron to cover the surface, close the lid, and cook for 3-5 minutes, or until golden and crispy.
    Repeat with the remaining batter.
  • Serve: Remove the waffles carefully from the iron and serve immediately with your favorite toppings such as fresh fruit, maple syrup, or dairy-free whipped cream.

Notes

  • For a crispier texture, you can add a tablespoon of cornstarch to the batter.
  • You can substitute the all-purpose flour with a gluten-free flour blend for a gluten-free option.
  • If you don’t have a waffle iron, you can use the batter to make pancakes in a skillet.
  • The waffles can be stored in the fridge for up to 3 days or frozen for up to 2 months. Reheat in the toaster or oven for best results.
  • Add your favorite mix-ins like blueberries, chocolate chips, or chopped nuts to customize your waffles.
