Ingredients
  

  • 2 cups Fresh or frozen pineapple chopped
  • 1 cup Heavy cream
  • 1 cup Whole milk
  • 3/4 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon juice optional
  • Pinch Salt
  • Optional Shredded coconut or rum extract for added tropical flavor

Instructions
 

Prepare the Pineapple:

  • Peel, core, and chop the pineapple into small chunks. If using frozen pineapple, allow it to thaw slightly for easier blending.

Make the Ice Cream Base:

  • In a medium saucepan, combine the heavy cream, whole milk, and sugar.
    Heat over medium heat, stirring occasionally until the sugar has dissolved completely.
    Once dissolved, remove from heat and stir in the vanilla extract and a pinch of salt. Let the mixture cool slightly.

Blend the Pineapple:

  • Place the chopped pineapple in a blender or food processor and blend until smooth.
    If you prefer a chunkier texture, pulse until you have small pineapple pieces.

Combine the Pineapple and Cream Mixture:

  • Mix the pineapple puree with the cooled cream mixture.
    Taste and adjust sweetness or add lemon juice for extra zing.

Churn the Ice Cream:

  • Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions (usually 20-25 minutes).
    For a firmer texture, transfer the ice cream to a container and freeze for 2-4 hours.

Serve and Enjoy:

  • Scoop the ice cream into bowls or cones and enjoy! You can also top it with shredded coconut or fresh fruit for an extra tropical touch.

Notes

  • Ripe Pineapple: The quality of the pineapple greatly affects the flavor, so choose a ripe, fragrant pineapple for the best taste.
  • No Ice Cream Maker? If you don’t have an ice cream maker, use the no-churn method by placing the mixture in a container and freezing it, stirring every 30 minutes to avoid ice crystals.
  • Sweetener Alternatives: For a healthier version, substitute granulated sugar with honey, maple syrup, or a sugar substitute like Stevia.
  • Add-Ins: To make it even more tropical, try adding shredded coconut, a splash of rum flavor, or a little lime juice for a zesty twist.
