Instructions
Prepare the Yeast Mixture
In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the water and stir gently. Let sit for 5-10 minutes until frothy.
Mix the Dry Ingredients
In a large bowl, whisk together the gluten-free flour blend and salt. Set aside.
Combine Wet Ingredients
In another bowl, whisk together the eggs, olive oil, apple cider vinegar, and milk. Add the activated yeast mixture to the wet ingredients and stir to combine.
Form the Dough
Gradually add the wet ingredients into the dry ingredients, stirring until a sticky dough forms.
Let the Dough Rise
Cover the bowl with a damp towel and let the dough rise in a warm area for 1-1.5 hours, or until it has doubled in size.
Shape the Rolls
Once the dough has risen, scoop out portions of dough with a spoon and form them into small rolls. Place them in a greased 9x13-inch baking dish or on a lined baking sheet.
Second Rise
Cover the shaped rolls loosely with a kitchen towel or plastic wrap and let them rise for another 30-45 minutes.
Bake the Rolls
Preheat your oven to 375°F (190°C). Bake the rolls for 18-20 minutes or until they are golden brown on top.
Cool and Serve
Let the rolls cool in the pan for 10 minutes before serving. Enjoy!
Notes
For best results, use a high-quality gluten-free flour blend that contains xanthan gum or guar gum.
The dough will be sticky, which is normal for gluten-free bread.
Be sure the water used to activate the yeast is warm but not too hot (about 110°F). Water that is too hot can kill the yeast.
If you want to make the rolls ahead of time, prepare the dough and refrigerate overnight. Let the rolls come to room temperature before baking.
