Ingredients
  

  • 1 cup Mayonnaise
  • 2 tablespoons Chipotle peppers in adobo sauce about 1-2 peppers
  • 1 clove Garlic minced
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil optional, to adjust texture
  • ½ teaspoon Smoked paprika optional
  • 1 tablespoon Fresh cilantro optional, for garnish

Instructions
 

Prepare the Chipotle Peppers:

  • Remove 1-2 chipotle peppers from the adobo sauce, remove seeds for less heat, and finely chop or puree them to your preferred consistency.

Mix the Ingredients:

  • In a small bowl, combine 1 cup of mayonnaise, 2 tablespoons of chipotle peppers, minced garlic, and lemon juice.
    If you're using smoked paprika and cilantro, add them now.

Whisk Together:

  • Whisk the ingredients together until smooth and well combined.
    If you prefer a thinner texture, slowly stir in 1 tablespoon of olive oil.

Taste and Adjust:

  • Taste the aioli and adjust the seasoning as needed.
    You can add more chipotle for heat or more lemon juice for acidity.

Chill:

  • Cover the aioli and refrigerate for at least 30 minutes to let the flavors meld together.
    Serve chilled.

Notes

  • Adjust Spice Level: Feel free to add more or fewer chipotle peppers depending on your desired heat level. For a milder aioli, remove the seeds from the peppers before adding them.
  • Make Ahead: This aioli can be made up to 24 hours in advance. The flavors will deepen and improve as it sits in the fridge.
  • Vegan Version: Use a plant-based mayonnaise to make this aioli vegan-friendly.
  • Additional Flavor Variations: You can add a pinch of cayenne pepper or chili powder for extra heat, or a bit of honey for a touch of sweetness.
