Pea and Mint Soup is a light and refreshing soup with a smooth texture, made from fresh or frozen peas and aromatic mint leaves.
The soup is healthy, quick to prepare, and has a naturally sweet flavor that is complemented by the mint’s cooling effect.

Ingredients
  

  • 2 cups Peas fresh or frozen
  • 1 tablespoon Olive Oil
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 3 cups Vegetable Broth or chicken broth
  • 1/4 cup Fresh Mint Leaves
  • Salt to taste
  • Pepper to taste
  • Optional: Crème Fraîche or Yogurt for serving

Instructions
 

Sauté the Onions and Garlic

  • Heat the olive oil in a large pot over medium heat.
    Add the chopped onion and cook until softened and translucent, about 5 minutes.
    Stir in the minced garlic and cook for another minute until fragrant.

Add the Peas and Broth

  • Add the peas to the pot and stir to combine.
    Pour in the vegetable broth and bring the mixture to a simmer.
    Cook for 5-7 minutes until the peas are tender.

Blend the Soup

  • Remove the pot from heat. Add the fresh mint leaves and use an immersion blender to blend the soup until smooth.
    Alternatively, transfer the soup to a blender in batches and blend until creamy.

Season and Serve

  • Taste the soup and adjust the seasoning with salt and pepper as desired.
    Serve the soup warm or chilled, optionally garnished with a dollop of crème fraîche or yogurt and extra mint leaves.

Notes

  • Fresh vs. Frozen Peas: Fresh peas will offer a slightly sweeter flavor, but frozen peas are a great and convenient option that work perfectly in this soup.
  • Mint Adjustments: Feel free to adjust the amount of mint to your taste preference. Start with a smaller amount and add more if you desire a stronger mint flavor.
  • Make Ahead: This soup can be prepared ahead of time and stored in the refrigerator for up to 3 days. The flavors often intensify as it sits.
  • Freezing: The soup can be frozen for up to 3 months. To reheat, thaw in the fridge overnight and gently heat on the stove.
