Ingredients
  

  • 2 slices of Whole Grain or Sourdough Bread
  • 1 ripe Avocado
  • 1/2 cup Cherry Tomatoes halved
  • 1/4 cup Kalamata Olives pitted and sliced
  • 1/4 cup Feta Cheese crumbled
  • 1/4 small Red Onion thinly sliced
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Fresh Lemon Juice
  • 1/4 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste
  • 1 tbsp Fresh Basil chopped (optional garnish)
  • 1 tbsp Fresh Parsley chopped (optional garnish)

Instructions
 

  • Toast the Bread: Toast the slices of whole grain or sourdough bread in a toaster or grill pan until golden and crispy.
  • Prepare the Avocado: Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until creamy but still slightly chunky. Add a squeeze of lemon juice, salt, and pepper, then mix until well combined.
  • Assemble the Toast: Spread the mashed avocado evenly onto each slice of toasted bread.
  • Add the Toppings: Top the avocado with halved cherry tomatoes, sliced Kalamata olives, crumbled feta cheese, and thin slices of red onion.
  • Finish with Olive Oil & Seasoning: Drizzle each toast with extra virgin olive oil and a bit more lemon juice. Season with salt and pepper to taste.
  • Garnish and Serve: Garnish with fresh basil and parsley for a pop of color and extra flavor. Serve immediately and enjoy!

Notes

  • Bread Options: You can use any type of bread you prefer, such as whole grain, sourdough, or even gluten-free bread for a lighter, healthier version.
