Ingredients
  

For the Meatloaf

  • 1 ½ lbs 680g Ground Beef (80/20 for best texture)
  • 2 Large Eggs
  • ½ cup 50g Almond Flour (or ½ cup crushed pork rinds)
  • ¼ cup 60ml Heavy Cream
  • ½ cup 50g Shredded Cheese (optional, for extra moisture)
  • ½ Small Onion Finely Chopped
  • 2 Cloves Garlic Minced
  • 1 tbsp Worcestershire Sauce or coconut aminos for keto-friendly option
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1 tsp Smoked Paprika
  • 1 tsp Italian Seasoning
  • 1 tbsp Fresh Parsley Chopped (Optional)

For the Keto Glaze

  • ¼ cup 60ml Sugar-Free Ketchup
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Keto Sweetener Monk Fruit, Erythritol, or your preferred choice

Instructions
 

Step 1: Prepare the Oven and Ingredients

  • Preheat the oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or grease a loaf pan.

Step 2: Mix the Meatloaf Mixture

  • In a large mixing bowl, combine the ground beef, eggs, almond flour (or crushed pork rinds), heavy cream, and shredded cheese.
  • Add the chopped onion, minced garlic, Worcestershire sauce, salt, pepper, smoked paprika, and Italian seasoning.
  • Gently mix everything together until just combined. Do not overmix, as this can make the meatloaf dense.

Step 3: Shape and Bake

  • Transfer the mixture to the prepared baking sheet or loaf pan, shaping it into a loaf.
  • Bake in the preheated oven for 40-50 minutes, or until the internal temperature reaches 160°F (71°C).

Step 4: Prepare the Keto Glaze

  • While the meatloaf is baking, mix the sugar-free ketchup, apple cider vinegar, and keto sweetener in a small bowl.
  • About 10-15 minutes before the meatloaf is done, remove it from the oven and brush the glaze evenly over the top.
  • Return the meatloaf to the oven and finish baking.

Step 5: Rest and Serve

  • Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
  • Slice and serve with your favorite keto-friendly sides.

Notes

  • For Extra Juiciness: Mix ground beef with ground pork or use 80/20 beef.
  • Dairy-Free Option: Omit shredded cheese and replace heavy cream with unsweetened almond milk or coconut cream.
  • Spicy Variation: Add ½ tsp red pepper flakes or finely diced jalapeños.
  • Make It in an Air Fryer: Shape into a smaller loaf and cook at 350°F (175°C) for 25-30 minutes.
  • Storage: Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
