Slice the sausage into bite-sized pieces or leave them whole if preferred.
Chop the bell peppers and onion into medium-sized pieces. Mince the garlic.
Drizzle olive oil into the bottom of the crockpot. Add the sausage, followed by the peppers, onions, and garlic.
Sprinkle oregano, basil, salt, pepper, and red pepper flakes (if using) over the ingredients.
Pour the chicken broth over everything to add moisture.
Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the sausages are fully cooked and the peppers are tender.
Stir well before serving and adjust seasonings if necessary.
Serve with cauliflower rice or another keto-friendly side, if desired.
