Ingredients
  

  • 1 lb Italian sausage or smoked sausage
  • 3 bell peppers red, yellow, green
  • 1 medium onion
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes optional
  • 1/4 cup chicken broth or water

Instructions
 

  • Slice the sausage into bite-sized pieces or leave them whole if preferred.
  • Chop the bell peppers and onion into medium-sized pieces. Mince the garlic.
  • Drizzle olive oil into the bottom of the crockpot. Add the sausage, followed by the peppers, onions, and garlic.
  • Sprinkle oregano, basil, salt, pepper, and red pepper flakes (if using) over the ingredients.
  • Pour the chicken broth over everything to add moisture.
  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the sausages are fully cooked and the peppers are tender.
  • Stir well before serving and adjust seasonings if necessary.
  • Serve with cauliflower rice or another keto-friendly side, if desired.
