Ingredients
  

  • 4 boneless skinless chicken breasts
  • 6 slices of bacon cooked and crumbled
  • 1 packet 1 ounce ranch seasoning mix (or homemade)
  • 8 ounces cream cheese cubed
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

  • Prepare the Chicken: Season the chicken breasts with salt, pepper, and any additional seasonings you prefer. Place the chicken in the bottom of the crockpot.
  • Add the Creamy Base: Add the cubed cream cheese, heavy cream, and ranch seasoning mix into the crockpot with the chicken. Stir gently to combine.
  • Crisp the Bacon: Cook the bacon slices in a skillet until crispy, then crumble them into small pieces. Set aside.
  • Add Bacon and Cheese: Sprinkle the crumbled bacon and shredded cheddar cheese over the chicken in the crockpot. Stir lightly to mix everything together.
  • Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and cooked through.
  • Final Touches: Once the chicken is cooked, stir the sauce, making sure the cheese has fully melted. Adjust the seasoning if necessary.
  • Serve: Garnish with additional crumbled bacon or fresh herbs, and serve hot over cauliflower rice, zucchini noodles, or as a standalone dish.

  • Frozen Chicken: You can use frozen chicken breasts, but be sure to adjust the cooking time. For frozen chicken, cook on low for 6-7 hours or on high for 3-4 hours.
  • Dairy-Free: Substitute cream cheese and cheese with dairy-free alternatives such as coconut cream cheese and vegan cheese.
  • Add More Veggies: If you prefer, you can add vegetables like mushrooms or spinach to the crockpot for extra flavor and nutrition.
  • Thickening the Sauce: If the sauce is too thin, you can cook the dish uncovered for an additional 20-30 minutes, or stir in a bit more cream cheese to thicken the sauce.
