Ingredients
  

  • 1 ½ pounds Beef flank steak or sirloin
  • 4 cups Broccoli florets fresh or frozen
  • ¼ cup Soy Sauce or coconut aminos for soy-free option
  • ¼ cup Beef Broth
  • 2 tablespoons Garlic minced
  • 2 tablespoons Ginger minced
  • 2 tablespoons Sesame Oil or avocado oil for a neutral flavor
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon Erythritol or a preferred low-carb sweetener
  • Salt and Pepper to taste
  • Optional: 1 tablespoon Xanthan Gum for thickening the sauce or Heavy Cream

Instructions
 

  • Slice the beef into thin strips against the grain.
  • In a mixing bowl, combine soy sauce, garlic, ginger, sesame oil, and apple cider vinegar to create a marinade.
  • Add the beef to the marinade and let it sit for at least 30 minutes.
  • Place the marinated beef into the crockpot and pour in the beef broth.
  • Set the crockpot on low heat and cook for 4-6 hours, or until the beef is tender.
  • About halfway through, stir the beef to distribute the sauce evenly.
  • Add the broccoli florets to the crockpot and stir.
  • Cover and cook for an additional 30 minutes or until the broccoli is tender.
  • If desired, thicken the sauce by stirring in xanthan gum or heavy cream.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Serve hot and enjoy!

Notes

  • You can adjust the seasoning according to your taste, adding more soy sauce or vinegar for a tangier flavor.
  • For a spicier version, consider adding red pepper flakes or chili paste to the sauce.
