Instructions
Prepare the Meatloaf Mixture
In a large bowl, combine the ground beef or pork, almond flour, egg, garlic powder, onion powder, salt, pepper, and Parmesan cheese (if using).
Shape the Meatloaf
Mix everything together until well combined. Then shape the mixture into a loaf form, making sure it’s compact but not too tightly packed.
Wrap the Meatloaf in Bacon
Lay the bacon slices on top of the meatloaf, wrapping them around it so the entire surface is covered. Use toothpicks to secure the bacon if necessary.
Cook in the Crockpot
Place the bacon-wrapped meatloaf into the crockpot.Cover and cook on low for 4 to 6 hours, until the internal temperature reaches 160°F (71°C).

About 30 minutes before serving, spread tomato paste or sugar-free ketchup over the bacon for a glossy glaze.

Notes
Bacon Crispiness: If you prefer extra-crispy bacon, you can place the meatloaf under the broiler for 2-3 minutes after it’s finished in the crockpot.
Moisture: Make sure the meat mixture isn’t too wet. If it feels too loose, add a bit more almond flour.
