Ingredients
  

  • 1/2 cup 120g Coconut Oil
  • 1/4 cup 30g Unsweetened Cocoa Powder
  • 1/2 cup 40g Shredded Unsweetened Coconut
  • 1/4 cup 60g Low-Carb Sweetener (such as stevia, erythritol, or monk fruit)
  • 1 tsp 5ml Vanilla Extract
  • Pinch of Salt

Instructions
 

  • Prepare the Dry Ingredients: In a medium-sized bowl, sift together the cocoa powder and shredded coconut to remove any lumps and ensure an even texture.
  • Melt the Wet Ingredients: In a microwave-safe bowl or double boiler, melt the coconut oil. Stir in your chosen sweetener until fully dissolved, then add the vanilla extract and a pinch of salt. Mix well.
  • Combine Dry and Wet Ingredients: Gradually pour the wet mixture into the dry ingredients, stirring constantly. Keep stirring until the mixture is smooth and well combined.
  • Pour Into Molds or Pan: Transfer the fudge mixture to silicone molds or a parchment paper-lined baking dish. Spread evenly with a spatula for uniform thickness.
  • Chill and Set: Place the mold or pan in the refrigerator for 1–2 hours to allow the fudge to set. For faster results, you can freeze it for about 30–45 minutes.
