Ingredients
  

  • 1 Medium Cabbage shredded
  • 1 Large Onion diced
  • 3 Garlic Cloves minced
  • 4 cups Bone Broth or Chicken Broth 1 liter
  • 2 tbsp Olive Oil or Butter
  • 1 Zucchini sliced
  • 1 Bell Pepper diced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 2 Bay Leaves

Instructions
 

Prepare the Vegetables:

  • Chop the cabbage into thin strips. Dice the onion, slice the zucchini, and chop the bell pepper. Mince the garlic.

Sauté the Aromatics:

  • Heat the olive oil or butter in a large pot over medium heat. Add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and softened.

Add Broth:

  • Pour in the bone broth or chicken broth and bring the mixture to a gentle simmer.

Add Vegetables:

  • Stir in the cabbage, zucchini, and bell pepper. Simmer for 10-15 minutes, or until the vegetables are tender and cooked through.

Season the Soup:

  • Add salt, pepper, oregano, thyme, and bay leaves. Stir to combine, adjusting the seasoning as needed.

Simmer and Finish:

  • Allow the soup to simmer for another 5-10 minutes to let the flavors meld together. Remove the bay leaves before serving.

Serve:

  • Ladle the soup into bowls and serve hot. Garnish with fresh herbs or a drizzle of olive oil, if desired.
