  • 1 Whisk or Electric Mixer
  • 1 Spatula
  • 1 Measuring Cup and Spoons
  • 1 Cooling Rack (optional, for cooling the bites)

Ingredients

  • 1 cup Almond Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/2 teaspoon Baking Powder
  • 2 large Eggs
  • 1/4 cup Butter or coconut oil, melted
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Erythritol or sweetener of choice

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
  • Mix Dry Ingredients: In a medium-sized bowl, whisk together almond flour, unsweetened cocoa powder, and baking powder.
  • Combine Wet Ingredients: In a separate bowl, beat together eggs, melted butter (or coconut oil), vanilla extract, and erythritol until smooth.
  • Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry mixture, stirring gently until fully combined.
  • Scoop the Batter: Using a spoon or small cookie scoop, portion the batter evenly into the mini muffin tin, filling each cup about 2/3 full.
  • Bake: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs.
  • Cool: Allow the brownie bites to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  • Serve: Once cooled, enjoy your delicious Keto Brownie Bites as a quick snack, dessert, or treat.

Notes

Recipe Notes

  • Storage: Store the brownie bites in an airtight container at room temperature for up to 3 days, or refrigerate for up to 7 days. For long-term storage, freeze them for up to 3 months.
  • Sweetener: Adjust the amount of erythritol based on your personal preference for sweetness. You can also use monk fruit or stevia, but keep in mind that different sweeteners may have different sweetness levels.
  • Dairy-Free Option: To make these brownie bites dairy-free, swap the butter with coconut oil or ghee.
  • Texture: These brownie bites are intentionally fudgy. If you prefer a firmer texture, bake them for a little longer, but be careful not to dry them out.
