Instructions
Prepare the Beef
Cut the beef into bite-sized chunks, trimming any excess fat. Heat the oil in a large pot over medium-high heat. Brown the beef on all sides, ensuring it gets a nice sear. Once browned, remove the beef and set it aside.
Sauté Vegetables
In the same pot, add the chopped garlic and onions. Sauté for 2-3 minutes until softened and fragrant.Add the zucchini, celery, and mushrooms, stirring occasionally. Cook for another 3-4 minutes until the vegetables begin to soften.
Create the Soup Base
Pour in the bone broth or stock, scraping the bottom of the pot to lift any flavorful brown bits. Add the dried thyme, rosemary, bay leaves, and season with salt and pepper. Stir well to combine. Return the browned beef to the pot.
Simmer
Bring the soup to a simmer. Reduce the heat to low, cover partially, and let it simmer for 1.5 to 2 hours until the beef is tender and the flavors have melded together.
Finishing Touches
Taste the soup and adjust the seasoning as needed. If desired, stir in the heavy cream for a richer, creamier texture. Serve hot with fresh herbs or a drizzle of extra cream, if desired.
Notes
Beef Cut: Using cuts like chuck roast or stew meat ensures the beef becomes tender after simmering. These cuts are also flavorful and relatively affordable for keto meals.
Creaminess: If you prefer a creamy texture, adding heavy cream at the end is optional but recommended. You can also use coconut milk for a dairy-free option.
Storage: Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months. Reheat gently to maintain flavor and texture.
Low-Carb Vegetables: You can swap out or add more low-carb vegetables like spinach, cauliflower, or bell peppers to suit your preferences.
