  • 1 Microwave-Safe Bowl or Double Boiler
  • 1 Fork (for dipping)

Ingredients
  

  • 1 cup 80g Unsweetened Shredded Coconut
  • ½ cup 120g Almond Butter
  • 1 tsp Vanilla Extract
  • 2-3 tbsp Low-Carb Sweetener Erythritol, Stevia, or Monk Fruit, adjust to taste
  • 12-15 Whole Almonds
  • ½ cup 90g Sugar-Free Dark Chocolate (70% cocoa or higher)
  • 1 tbsp Coconut Oil

Instructions
 

  • Prepare the Coconut Mixture: In a medium bowl, combine the shredded coconut, almond butter, vanilla extract, and sweetener.
    Stir until the mixture is fully combined and becomes sticky.
  • Shape the Bites: Take small portions of the coconut mixture and roll them into bite-sized balls.
    Place one whole almond into the center of each ball, gently pressing it in so it stays in place.
  • Melt the Chocolate: In a microwave-safe bowl, melt the sugar-free dark chocolate and coconut oil together.
    Heat in short 20-second bursts, stirring in between, until fully melted and smooth.
  • Coat the Bites: Dip each coconut-almond ball into the melted chocolate, ensuring it is completely coated.
    Use a fork to lift it out of the chocolate and place it on a parchment-lined tray.
  • Chill and Set: Refrigerate the tray for at least 30 minutes until the chocolate hardens and the bites are set.
  • Serve & Enjoy: Once set, your Keto Almond Joy Bites are ready to enjoy! Store any leftovers in an airtight container in the fridge.

Notes

  • Sweetener: You can adjust the amount of sweetener to your taste preference. If you like a sweeter treat, add a bit more sweetener.
  • Chocolate Coating: For a smoother chocolate coating, you can add a little extra coconut oil or a small amount of heavy cream when melting the chocolate.
  • Almond Substitutes: You can swap the almonds with other nuts such as cashews or pecans if preferred.
