  • In a food processor or blender, combine the mayonnaise, chopped cilantro, jalapeños, garlic, and lime juice.
    Pulse until smooth and creamy.

Adjust to Taste:

  • Taste the aioli and add salt, more lime juice, or additional jalapeño if needed.
Blend again if you adjust the seasonings.

Chill and Serve:

  • Transfer the aioli to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve:

  • Enjoy your Cilantro Jalapeño Aioli with fries, tacos, grilled meats, sandwiches, or as a dip for veggies.

Notes

  • Vegan Option: To make this aioli vegan, swap out the regular mayonnaise for a plant-based version.
  • Adjust Heat: For a milder version, remove the seeds and ribs of the jalapeños before blending. For more heat, leave the seeds in or add an extra jalapeño.
  • Make Ahead: This aioli can be made ahead of time and stored in the fridge for up to 4-5 days. The flavors continue to improve as it sits.
  • Alternative Substitutes: If you don’t have cilantro, parsley can be a good alternative, though it will change the flavor profile.
