Equipment

  • Toaster or Skillet: 1 unit, for toasting bread
  • Knife or Spoon: 1 unit, for spreading hummus
  • Cutting Board: 1 unit, for slicing vegetables or herbs (if using)
  • Measuring Spoons (optional): For seasoning and drizzling olive oil or other toppings

Ingredients

  • 2 slices of whole grain or sourdough bread
  • 1/3 cup about 75g of hummus (store-bought or homemade)
  • 1/4 cup of cherry tomatoes sliced
  • 1/4 cup of cucumber sliced
  • 1 tablespoon of olive oil optional, for drizzling
  • 1 teaspoon of sesame seeds or pumpkin seeds optional, for crunch
  • Fresh herbs like parsley or cilantro for garnish
  • Salt and pepper to taste

Instructions

Toast the Bread:

  • Preheat your toaster or skillet. Toast the bread until it reaches your desired crispness—about 3-5 minutes for golden-brown toast.

Spread the Hummus:

  • Once the bread is toasted, spread a generous layer of hummus on each slice. Use the back of a spoon or a butter knife to ensure the hummus is evenly distributed.

Add Toppings:

  • Top the hummus with sliced cherry tomatoes, cucumber, and any other veggies or herbs you prefer. For a Mediterranean touch, add a few Kalamata olives or crumbled feta.

Garnish and Season:

  • Drizzle a bit of olive oil over the top (optional) for extra richness, and sprinkle with sesame or pumpkin seeds for a satisfying crunch. Season with salt and pepper to taste.

Serve:

  • Your hummus toast is ready to serve! Enjoy it warm for a perfect, nutritious snack or meal.

Notes

  • Bread Variety: For a gluten-free option, use gluten-free bread or rice cakes.
  • Toppings: Feel free to add roasted vegetables, avocado, or a drizzle of balsamic glaze for extra flavor.
  • Hummus: Store-bought hummus works perfectly, but homemade hummus can take the toast to the next level. You can experiment with different hummus flavors like roasted red pepper or garlic for a twist.
  • Storage: Toast is best enjoyed immediately, but the components (hummus, veggies, and bread) can be stored separately in airtight containers in the fridge for a day or two.
