Greek Salad Skewers are a delicious, fun, and fresh twist on the classic Greek salad.

Ingredients
  

  • 1 cucumber sliced into thick rounds
  • 1 cup cherry tomatoes halved (or whole if small)
  • ½ red onion sliced into thin wedges or rings
  • 1 cup Kalamata olives pitted
  • 1 block about 200g feta cheese, cut into cubes
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley or mint for garnish optional

Instructions
 

  • Prepare the Vegetables and Cheese: Wash the cucumber, tomatoes, and onion. Slice the cucumber into thick rounds or half-moons, halve the cherry tomatoes, and slice the red onion into thin wedges or rings. Cut the feta cheese into cubes that are easy to thread onto skewers.
  • Assemble the Skewers: Thread the prepared cucumber, cherry tomato, red onion, feta cheese, and Kalamata olives onto the skewers, alternating between the vegetables and cheese. Repeat until all the skewers are filled, ensuring each skewer has a balanced mix of ingredients.
  • Make the Dressing: In a small bowl, mix the olive oil, lemon juice, oregano, salt, and pepper. Stir until well combined.
  • Grill (Optional): If you prefer grilled skewers, preheat your grill to medium heat. Brush the skewers with a little olive oil and grill them for 5-7 minutes, turning occasionally, until the vegetables are slightly charred and the cheese is warmed through. Remove from the grill.
  • Serve: Arrange the skewers on a serving platter. Drizzle the dressing over the skewers or serve it on the side for dipping. Garnish with fresh herbs like parsley or mint, if desired.
  • Enjoy: Serve immediately as a refreshing appetizer or side dish. These skewers are also perfect for picnics, BBQs, or parties!

Notes

  • Vegetable Variations: Feel free to add other vegetables such as bell peppers, zucchini, or cherry peppers for a different twist on the skewers.
  • Vegan Option: Substitute the feta cheese with plant-based feta or leave it out entirely for a dairy-free version.
  • Make Ahead: You can assemble the skewers ahead of time and store them in the fridge.
  • Drizzle the dressing on right before serving to avoid soggy skewers.
  • Grilling: Grilled skewers add a smoky flavor, but if you’re short on time, you can serve the skewers without grilling them—fresh and cold from the fridge is just as delicious.
