Ingredients
  

  • 2 medium English cucumbers sliced
  • 2 large tomatoes cut into wedges
  • 1 small red onion thinly sliced
  • 1/2 cup Kalamata olives pitted
  • 1/2 cup feta cheese crumbled or in blocks
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon red wine vinegar
  • 1 garlic clove minced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Prepare the Vegetables: Wash and slice the cucumbers into half-moons.
    Cut the tomatoes into wedges and slice the red onion thinly.
  • Combine the Ingredients: In a large bowl, add the cucumbers, tomatoes, red onion, Kalamata olives, and crumbled feta cheese. Gently toss to combine.
  • Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, and dried oregano.
    Season with salt and pepper to taste.
  • Toss the Salad: Pour the dressing over the salad and toss gently to coat all the ingredients.
    Serve immediately or refrigerate for about 30 minutes for the flavors to meld together.
  • Optional Garnish: Garnish with fresh herbs like parsley or dill, if desired.
