Ingredients
  

Skewers

  • 12 cherry tomatoes
  • 1 small cucumber sliced into 12 rounds
  • 4 oz feta cheese cut into 12 cubes
  • 12 Kalamata olives pitted
  • 6 marinated artichoke hearts halved
  • 6 slices of salami or prosciutto folded (optional)
  • 6 roasted red pepper strips cut in half
  • 12 fresh basil or oregano leaves

Dressing & Garnish

  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze optional
  • ¼ tsp cracked black pepper

Instructions
 

Step 1: Prepare the Ingredients

  • Wash and dry the cherry tomatoes and cucumber.
    Slice the cucumber into ½-inch rounds.
  • Cut the feta cheese into bite-sized cubes.
  • Drain and pat dry the olives, artichoke hearts, and roasted peppers to remove excess moisture.
  • If using salami or prosciutto, fold each slice into a small roll for easy skewering.

Step 2: Assemble the Skewers

  • Thread ingredients onto each skewer in this order:
  • Cherry tomato
  • Cucumber slice
  • Feta cube
  • Kalamata olive
  • Marinated artichoke heart
  • Folded salami (if using)
  • Roasted red pepper strip
  • Repeat for all 12 skewers, ensuring a balanced mix of colors and textures.

Step 3: Add Finishing Touches

  • Arrange skewers on a serving platter.
  • Drizzle olive oil evenly over the skewers.
  • If using, drizzle with balsamic glaze for extra depth of flavor.
  • Sprinkle with fresh herbs and cracked black pepper before serving.
