Ingredients
  

  • 4 medium Yukon Gold or Russet potatoes peeled and cut into wedges
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 tablespoons extra virgin olive oil
  • 3 cloves garlic minced
  • 1 tablespoon dried or fresh oregano
  • 1 teaspoon dried rosemary optional

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Prepare the potatoes: Peel (optional) and cut the potatoes into wedges. Rinse them under cold water to remove excess starch, then pat dry with a paper towel.
  • Make the marinade: In a large mixing bowl, combine lemon juice, lemon zest, olive oil, minced garlic, oregano, rosemary (if using), salt, and pepper. Stir well to combine.
  • Marinate the potatoes: Add the potato wedges into the bowl with the marinade. Toss them thoroughly to ensure they are evenly coated. Let the potatoes marinate for at least 30 minutes (or longer if desired).
  • Roast the potatoes: Spread the marinated potatoes on a baking sheet lined with parchment paper or lightly greased. Arrange them in a single layer.
  • Cook: Roast in the preheated oven for 40-50 minutes, flipping the potatoes halfway through for even browning, until they are golden and crispy on the outside and soft on the inside.
  • Serve: Garnish with fresh herbs, if desired, and serve immediately.

Notes

  • Marination time: Allowing the potatoes to marinate for at least 30 minutes enhances the flavor. For even more intense flavor, you can marinate the potatoes overnight.
