Equipment

  • 1 medium mixing bowl
  • 1 Fork or Hand Mixer
  • 1 Knife
  • 1 Cutting Board
  • 1 Measuring Spoon for Lemon Juice and Olive Oil

Ingredients

  • 8 oz Feta Cheese Crumbled
  • 4 oz Cream Cheese or Greek Yogurt or a mix of both for creaminess
  • 1 Cup Cucumber Diced
  • 1/2 Cup Tomatoes Diced
  • 1/4 Cup Red Onion Diced
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Fresh Oregano Chopped
  • 1 tbsp Fresh Parsley Chopped
  • 1 tbsp Fresh Dill Chopped
  • 1 tbsp Lemon Juice
  • Salt and Pepper to taste

Instructions

Prepare the Base

  • In a medium mixing bowl, crumble the feta cheese. If using Greek yogurt or cream cheese, add it to the bowl as well.
Using a fork or hand mixer, blend the ingredients together until smooth.
You can leave the feta slightly chunky for more texture if you prefer.

Add Fresh Vegetables

  • Dice the cucumber, tomatoes, and red onion into small pieces.
Add them to the feta mixture, stirring gently to combine.

Season the Dip

  • Drizzle the olive oil over the mixture and squeeze in the lemon juice.
Add the chopped oregano, parsley, and dill. Season with salt and pepper to taste.
Stir gently to ensure everything is well mixed.

Chill and Serve

  • Cover the bowl and refrigerate the dip for at least 30 minutes to allow the flavors to meld.
When ready to serve, garnish with extra herbs, a drizzle of olive oil, or a sprinkle of black pepper if desired.

Notes

  • Make-Ahead Tip: This dip can be made up to 24 hours in advance and kept in the refrigerator. The flavors develop more as it sits, so it's perfect for preparing ahead of time.
  • Vegetable Variations: You can add additional vegetables like bell peppers, olives, or cherry tomatoes for extra flavor and color.
  • Vegan Option: For a dairy-free version, substitute the feta cheese with vegan feta and use non-dairy yogurt or cream cheese alternatives.
  • Consistency Adjustments: If you prefer a smoother dip, use more Greek yogurt or cream cheese to achieve a creamier texture.
