Instructions
Prepare the Marinade: In a large mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, pepper, and paprika (optional). Whisk together until fully mixed.
Marinate the Chicken: Cut the chicken into bite-sized pieces or strips. Place the chicken into the bowl with the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (up to 3 hours for best flavor).
Preheat the Grill or Skillet: If grilling, preheat the grill to medium-high heat. If using a skillet, heat olive oil in a pan over medium-high heat.
Cook the Chicken: Thread the marinated chicken onto skewers (if grilling) or place it directly in the skillet. Grill or cook for 4-5 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
Serve: Remove the chicken from the skewers (if grilled) and serve it with warm pita, fresh vegetables, and tzatziki sauce. Enjoy!
Notes
Chicken Selection: While boneless, skinless chicken breasts are typically used, chicken thighs provide more flavor and juiciness.
Marinating Time: The chicken can be marinated for anywhere between 30 minutes to overnight for the best results.
Grilling vs. Skillet: If you don’t have access to a grill, a skillet works just as well to get a nice sear on the chicken.
Vegetable Additions: Feel free to include a side of Greek salad, rice, or roasted potatoes for a more substantial meal.
Tzatziki: Homemade or store-bought tzatziki sauce works wonderfully with this dish for a cool, creamy contrast.
