Ingredients
  

  • 2 medium-sized zucchinis approx. 2 cups grated
  • 1 large egg 1 unit
  • 1/2 cup feta cheese crumbled
  • 1/4 cup breadcrumbs regular or gluten-free
  • 2 tablespoons fresh dill chopped
  • 1 garlic clove minced
  • 1 tablespoon olive oil for brushing
  • Salt to taste
  • Pepper to taste

Instructions
 

Prepare the Zucchini:

  • Grate the zucchini using a box grater or food processor.
    Place the grated zucchini into a clean kitchen towel or cheesecloth, and squeeze out as much moisture as possible.
    This step is crucial to avoid soggy fritters.

Mix the Batter:

  • In a large mixing bowl, combine the grated zucchini, egg, crumbled feta cheese, breadcrumbs, chopped dill, minced garlic, salt, and pepper.
    Stir until everything is well mixed. If the mixture is too wet, add a little more breadcrumbs.

Form the Fritters:

  • Using your hands or a spoon, form the mixture into small patties, about 2 inches in diameter.
    Flatten them slightly to ensure they cook evenly.

Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
    Lightly spray the air fryer basket with olive oil or brush the fritters with olive oil on both sides.

Air Fry the Fritters:

  • Arrange the fritters in a single layer in the air fryer basket.
    Cook for 10-12 minutes, flipping halfway through, until the fritters are golden brown and crispy on both sides.

Serve:

  • Once cooked, remove the fritters from the air fryer.
    Serve them hot with a side of tzatziki sauce or a squeeze of fresh lemon for extra flavor. Enjoy!
