Ingredients
  

  • 4 boneless skinless chicken breasts (or thighs, 1.5 lbs)
  • 1/2 cup Greek yogurt plain
  • 2 tbsp olive oil
  • 1 tbsp lemon juice fresh
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt to taste
  • Black pepper to taste
  • Optional: 1/2 tsp chili flakes for heat

Instructions
 

Marinate the Chicken:

  • In a large mixing bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, oregano, thyme, rosemary, salt, and pepper.
    Whisk together until smooth. Add the chicken breasts to the marinade, making sure each piece is well-coated.
    Cover and refrigerate for at least 30 minutes (up to overnight for best flavor).

Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.
    This ensures that the air fryer reaches the proper temperature for cooking.

Cook the Chicken:

  • Remove the chicken from the marinade and lightly pat it dry with paper towels to remove excess moisture.
    Place the chicken in the air fryer basket in a single layer, making sure they aren’t overlapping.
    Cook for 12-15 minutes for breasts, flipping halfway through. If you’re using thighs or drumsticks, cook for 18-25 minutes.
    Check for an internal temperature of 165°F (75°C) using a meat thermometer to ensure it’s fully cooked.

Rest the Chicken:

  • Once cooked, remove the chicken from the air fryer and let it rest for 5-10 minutes to allow the juices to redistribute and keep the meat tender.

Serve:

  • Slice and serve with your favorite Greek sides like a Greek salad, roasted vegetables, or tzatziki sauce.

Notes

  • Marinate Longer for More Flavor: For best results, marinate the chicken overnight. However, even 30 minutes will work if you’re short on time.
  • Cut Variations: You can use boneless, skinless chicken thighs or drumsticks if you prefer. Thighs, in particular, tend to be juicier than breasts.
  • Adjusting Spice Level: If you prefer more spice, add more chili flakes to the marinade or serve with a spicy dipping sauce.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer for a crispy texture.
