Fried zucchini is a delicious, crispy snack or appetizer that’s easy to make with just a few ingredients.
This dish features fresh zucchini slices coated in a seasoned breadcrumb mixture and fried to golden perfection.

Equipment

  • 1 shallow bowl for flour
  • 1 shallow bowl (for beaten eggs)
  • 1 shallow bowl for breadcrumbs
  • 1 large frying pan or skillet
  • 1 slotted spoon or tongs
  • 1 paper towel-lined plate
  • 1 knife (for slicing zucchini)
  • 1 Cutting Board
  • 1 Plate (For serving)

Ingredients
  

  • 3 medium zucchinis
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs regular or panko
  • 1/4 cup grated Parmesan cheese optional
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cups vegetable oil for frying

Instructions
 

  • Wash the zucchinis thoroughly and slice them into ¼ to ½ inch thick rounds.
  • Set up your breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs, Parmesan cheese, and seasonings (garlic powder, onion powder, salt, and pepper).
  • Heat oil in a large frying pan over medium-high heat.
  • Coat each zucchini slice in flour, dip it into the beaten egg, and then coat it in the breadcrumb mixture.
  • Fry the zucchini slices in batches, ensuring not to overcrowd the pan.
    Fry each side for 2-3 minutes or until golden brown and crispy.
  • Remove the fried zucchini slices from the pan and drain excess oil on paper towels.
  • Serve immediately with your favorite dipping sauce.

Notes

  • For a healthier option, you can bake or air fry the zucchini instead of frying.
  • Make sure the oil is hot enough (about 350°F or 175°C) to avoid soggy zucchini.
  • For a gluten-free version, use gluten-free breadcrumbs or alternative coatings such as almond flour or crushed rice crackers.
  • Feel free to experiment with different seasonings or add a pinch of cayenne pepper for a spicy kick.
