Ingredients
  

  • 4 large Eggs
  • 1 medium Onion finely chopped
  • 2 medium Tomatoes finely chopped
  • 2 Green Chilies chopped
  • 1 tablespoon Fresh Ginger minced
  • 1 tablespoon Fresh Garlic minced
  • 2 tablespoons Fresh Coriander chopped (for garnishing)
  • ½ teaspoon Cumin Seeds
  • ½ teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Garam Masala
  • Salt and Pepper to taste
  • 2 tablespoons Oil or Butter for cooking

Instructions
 

  • Prepare the ingredients: Chop the onions, tomatoes, and green chilies.
    Mince the ginger and garlic. Beat the eggs in a bowl and set aside.
  • Tempering the spices: Heat oil or butter in a medium-sized pan over medium heat. Once hot, add cumin seeds and let them splutter.
    Add chopped onions and sauté until golden brown.
  • Adding ginger, garlic, and chilies: Add minced ginger, garlic, and green chilies to the pan.
    Stir for 1-2 minutes until fragrant.
  • Cooking the vegetables: Add chopped tomatoes to the pan and cook until soft.
    Add any additional vegetables like bell peppers or peas at this point if desired. Stir occasionally.
  • Scrambling the eggs: Pour in the beaten eggs and reduce the heat. Stir continuously, scrambling the eggs with the vegetable mixture until fully cooked but soft.
  • Finishing touches: Add garam masala, salt, pepper, and fresh coriander. Stir well and cook for another minute.
  • Serving: Serve hot with roti, pav, or rice. Enjoy!

Notes

  • Vegetable Variations: Feel free to add extra vegetables like spinach, mushrooms, or peas to make the dish even more nutritious and flavorful.
  • For a Creamy Version: Add cheese or paneer to make the Egg Bhurji richer.
  • Adjust Spice Level: If you prefer a milder flavor, reduce the amount of green chilies and chili powder. For more heat, you can increase the spice levels.
  • Consistency: To achieve the perfect consistency, stir the eggs constantly while cooking and avoid overcooking them to maintain a soft, fluffy texture.
