Ingredients
  

For the Chipotle Cauliflower:

  • 1 small head cauliflower cut into florets
  • 2 chipotle peppers in adobo sauce
  • 2 tbsp adobo sauce
  • ½ cup unsweetened vegan yogurt
  • 1 garlic clove
  • 1 tbsp maple syrup
  • 1 tsp salt
  • 1 tsp paprika

For the Avocado Crema:

  • 2 ripe avocados peeled and pitted
  • ½ cup unsweetened vegan yogurt
  • ¼ cup fresh cilantro chopped
  • Juice of 2 limes
  • 1 garlic clove minced
  • ½ tsp salt

To Assemble:

  • 12 –15 tortillas
  • Pickled onions to taste
  • Fresh cilantro chopped, to taste
  • Jalapeños fresh or pickled, chopped, to taste

Instructions
 

  • Preheat Oven for Roasting: Begin by preheating your oven to 400°F (200°C).
    This ensures the cauliflower will roast evenly, developing a slightly crispy, caramelized exterior while remaining tender inside.
    Line a baking sheet with parchment paper to prevent sticking and make cleanup effortless.
  • Prepare the Smoky Chipotle Sauce: In a blender or food processor, combine 2 chipotle peppers, 2 tablespoons of adobo sauce, ½ cup unsweetened vegan yogurt, 1 garlic clove, 1 tablespoon maple syrup, 1 teaspoon salt, and 1 teaspoon paprika.
    Blend until the mixture becomes a smooth, creamy sauce with an even consistency.
    This smoky, slightly spicy sauce will coat the cauliflower perfectly, infusing it with bold flavor.
  • Coat the Cauliflower Florets: Place your cauliflower florets into a large mixing bowl.
    Pour the prepared chipotle sauce over the florets, making sure each piece is fully coated.
    Using a spoon or your hands (wearing gloves if preferred), gently toss the cauliflower until the sauce evenly covers all pieces.

    Stir in ½ cup unsweetened vegan yogurt, ¼ cup chopped fresh cilantro, the juice of 2 limes, 1 minced garlic clove, and ½ teaspoon salt.
    Mix until fully combined into a creamy, tangy, herbaceous sauce.

  • Warm the Tortillas: Before assembling, warm your tortillas to enhance their flavor and flexibility.
