Equipment

  • Mixing Bowls (2 large bowls)
  • Hand Mixer or Stand Mixer – 1
  • Freezer-Safe Container: 1 (at least 1.5 quarts)
  • Heatproof Bowl: 1
  • Spatula (1)

Ingredients

  • 8 ounces 225g Dark Chocolate (or semi-sweet chocolate)
  • 2 cups 475ml Heavy Cream
  • 1 cup 240ml Whole Milk
  • ¾ cup 150g Granulated Sugar
  • 2 teaspoons 10ml Vanilla Extract
  • A pinch Salt
  • Optional Mix-ins: Chocolate chips crushed nuts, or caramel sauce

Instructions

Prepare the Chocolate Fudge Base

  • Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave in 30-second intervals. Stir until smooth and set aside to cool slightly.

Whip the Cream

  • In a separate bowl, whip the heavy cream with a hand mixer until soft peaks form. Be careful not to overwhip.

Combine Chocolate and Cream

  • In a mixing bowl, combine the melted chocolate with the whole milk, sugar, and salt. Stir until smooth. Then, gently fold in the whipped cream using a spatula.

Freeze the Mixture

  • If using an ice cream maker, churn the mixture according to the manufacturer's instructions.
If not using an ice cream maker, pour the mixture into a freezer-safe container and freeze for 30 minutes.
After 30 minutes, stir the mixture with a fork to break up ice crystals.
Repeat this process every 30 minutes for about 4-6 hours, or until the ice cream reaches a smooth and creamy texture.

Add Mix-ins (Optional)

  • Once the ice cream has softened slightly, fold in your choice of mix-ins (chocolate chips, nuts, etc.). Return to the freezer to set for a few more hours.

Serve and Enjoy

  • Scoop the ice cream into bowls or cones and serve with your favorite toppings!

Notes

  • Storage: Store the ice cream in an airtight container in the freezer for up to 1-2 weeks. Let it sit out for a few minutes to soften before serving.
  • Mix-ins: Get creative with add-ins like crushed cookies, marshmallow fluff, or a drizzle of fudge for extra flavor and texture.
  • Sweetness Adjustment: If you prefer a sweeter ice cream, you can increase the sugar by 2 tablespoons. Adjust based on your taste preference.
