8ounces225g Dark Chocolate (or semi-sweet chocolate)
2cups475ml Heavy Cream
1cup240ml Whole Milk
¾cup150g Granulated Sugar
2teaspoons10ml Vanilla Extract
A pinch Salt
Optional Mix-ins: Chocolate chipscrushed nuts, or caramel sauce
Instructions
Prepare the Chocolate Fudge Base
Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave in 30-second intervals. Stir until smooth and set aside to cool slightly.
Whip the Cream
In a separate bowl, whip the heavy cream with a hand mixer until soft peaks form. Be careful not to overwhip.
Combine Chocolate and Cream
In a mixing bowl, combine the melted chocolate with the whole milk, sugar, and salt. Stir until smooth. Then, gently fold in the whipped cream using a spatula.
Freeze the Mixture
If using an ice cream maker, churn the mixture according to the manufacturer's instructions. If not using an ice cream maker, pour the mixture into a freezer-safe container and freeze for 30 minutes. After 30 minutes, stir the mixture with a fork to break up ice crystals. Repeat this process every 30 minutes for about 4-6 hours, or until the ice cream reaches a smooth and creamy texture.
