  • 1 small whisk or fork

Ingredients
  

  • 2 medium cucumbers
  • 3 medium tomatoes
  • ½ small red onion
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • 1 tablespoon fresh basil or parsley chopped

Instructions
 

  • Prepare the vegetables: Slice the cucumbers into thin half-moons or rounds, depending on your preference.
    Chop the tomatoes into bite-sized pieces, and thinly slice the red onion.
  • Make the dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
  • Toss the salad: In a large mixing bowl, combine the cucumbers, tomatoes, and onions.
    Pour the dressing over the vegetables and toss gently to coat.
  • Add fresh herbs: Sprinkle the chopped fresh basil or parsley over the salad, and give it one final toss.
  • Serve: Serve immediately, or chill for 30 minutes to allow the flavors to develop.

Notes

  • Make ahead: If preparing in advance, store the salad ingredients (except the dressing) in an airtight container in the refrigerator for up to 24 hours. Add the dressing just before serving to maintain the crispness of the vegetables.
  • Variations: You can add feta cheese, olives, or even roasted chickpeas for a twist. For a sweeter touch, drizzle some honey or balsamic glaze over the salad.
  • Herbs: Feel free to experiment with other fresh herbs like dill or mint for a different flavor profile.
