For the Banana Bread:
- 2 large ripe bananas (about 1 cup mashed)
- 2 large eggs
- ½ cup (120 ml) unsalted butter, melted (or neutral oil)
- ⅔ cup (135 g) granulated sugar
- 1 teaspoon vanilla extract
- 1 ½ cups (190 g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
For the Cinnamon Swirl:
- ⅓ cup (65 g) brown sugar
- 1 ½ teaspoons ground cinnamon
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, mash the bananas with a fork until smooth.
In a large bowl, whisk together the melted butter, sugar, eggs, vanilla extract, and mashed bananas until fully combined.
In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined.
In a small bowl, mix the brown sugar and cinnamon.
Pour half of the banana bread batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Add the remaining batter and top with the remaining cinnamon sugar. Use a skewer or knife to swirl the cinnamon mixture into the batter gently.
Place the loaf pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
