Equipment

  • 1 9x13-inch baking dish
  • 1 Mixing bowl
  • 1 whisk
  • 1 Knife (for cutting cinnamon rolls)
  • 1 Measuring cups and spoons

Ingredients

  • 2 cans 8 oz each refrigerated cinnamon rolls with icing
  • 4 large eggs
  • 1 cup whole milk
  • ½ cup brown sugar packed
  • 1 tsp vanilla extract
  • ¼ cup unsalted butter melted
  • 1 package optional cream cheese frosting (or homemade frosting)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
  • Prepare the cinnamon rolls: Open the cans of cinnamon rolls and cut each roll into quarters. Arrange them evenly in the prepared baking dish.
  • Make the custard mixture: In a large mixing bowl, whisk together the eggs, milk, brown sugar, vanilla extract, and melted butter until fully combined.
  • Pour the custard mixture: Pour the egg mixture over the cinnamon rolls, ensuring all pieces are soaked evenly. Use a spoon to gently press the cinnamon rolls into the mixture.
  • Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is set in the center.
  • Frost the casserole: Once out of the oven, drizzle the frosting from the cinnamon roll package over the top, or use your favorite frosting (cream cheese or maple glaze works great!).
  • Serve: Allow the casserole to cool for 5-10 minutes before serving. Enjoy warm!

Notes

  • Make Ahead Tip: This casserole can be prepared the night before. Simply assemble it, cover, and refrigerate overnight. Bake it the next morning for a quick and easy breakfast.
  • Customize It: Add in your favorite mix-ins such as chopped pecans, walnuts, or even some fresh fruit like berries or banana slices to customize the casserole to your taste.
  • Don’t Overbake: Keep an eye on the casserole as it bakes to avoid overcooking. You want a golden top but a soft, gooey center.
  • For Extra Frosting: If you love a lot of frosting, feel free to make extra and drizzle generously on top once the casserole is out of the oven.
