Cilantro Lime Aioli is a creamy, vibrant sauce made from mayonnaise (or Greek yogurt), fresh cilantro, zesty lime, and garlic.

Ingredients
  

  • 1 cup – Mayonnaise or Greek yogurt for a lighter option
  • 2 tablespoons – Fresh cilantro finely chopped
  • 1 tablespoon – Lime juice freshly squeezed
  • 1 teaspoon – Lime zest
  • 1 clove – Garlic minced
  • ½ teaspoon – Salt to taste
  • ¼ teaspoon – Black pepper to taste
  • 1 tablespoon – Olive oil optional, for added creaminess

Instructions
 

  • Prepare Ingredients: Finely chop the cilantro, zest the lime, and juice it. Mince the garlic clove.
  • Mix the Base: In a medium-sized mixing bowl, combine the mayonnaise (or Greek yogurt) with the lime juice and zest.
    Stir to blend well.
  • Add Fresh Ingredients: Stir in the chopped cilantro and minced garlic until fully incorporated into the base.
  • Season and Adjust: Taste the aioli and adjust the seasoning with salt and pepper.
    Add more lime juice or garlic if desired.
  • Optional - Add Olive Oil: If you prefer a creamier consistency, drizzle in the olive oil and stir until fully combined.
  • Refrigerate: For best results, let the aioli sit in the fridge for about 30 minutes to allow the flavors to meld together.

Notes

  • Adjust the Texture: If you prefer a thinner aioli, you can add a little extra lime juice or water. For a thicker texture, add more mayonnaise or yogurt.
  • Flavor Enhancements: Try adding a small amount of jalapeño or cayenne pepper for a spicy kick. You can also experiment with substituting the cilantro for fresh parsley or basil for different flavors.
  • Storage: Cilantro Lime Aioli can be stored in an airtight container in the refrigerator for up to 3-4 days. It’s best served fresh, but it will still taste delicious after a short time in the fridge.
  • Make It Vegan: For a vegan version, simply substitute the mayo with a plant-based alternative.
