Preheat your oven to 425°F (220°C).
Wash and scrub the sweet potatoes thoroughly. Peel if preferred, or leave the skin on for added texture.
Cut the sweet potatoes into evenly sized wedges, about ½ inch thick.
In a small bowl, mix together chipotle powder, smoked paprika, garlic powder, salt, pepper, and cornstarch (if using).
Place the sweet potato wedges into a large mixing bowl. Drizzle with olive oil and toss to coat.
Sprinkle the seasoning mix over the wedges and toss again until evenly coated.
Spread the wedges out in a single layer on a lined baking sheet, making sure they aren’t overcrowded.
Bake in the preheated oven for 20 minutes. Flip the wedges halfway through cooking.
Continue baking for an additional 15-20 minutes until golden and crispy.
Remove from the oven and let them rest for a few minutes before serving.
