Ingredients
  

  • 1/2 cup mayonnaise
  • 1-2 chipotle peppers in adobo sauce finely chopped (depending on spice preference)
  • 1 tablespoon adobo sauce from the chipotle pepper can
  • 1-2 cloves garlic minced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon olive oil optional, for extra smoothness
  • Salt & pepper to taste

Instructions
 

  • Prepare the Chipotle Peppers: Remove one or two chipotle peppers from the can, chop them finely, and remove the seeds if you prefer a milder sauce. Add the chopped peppers to your mixing bowl.
  • Combine Ingredients: To the bowl, add the mayonnaise, minced garlic, lime juice, adobo sauce, and a pinch of salt and pepper.
    Stir everything together until well combined.
  • Blend for Smoothness: If you prefer a smoother texture, use a blender or immersion blender to mix the ingredients until silky and fully incorporated.
    This step is optional.
  • Taste and Adjust: Taste your aioli and adjust seasoning, adding more lime juice for acidity or chipotle for heat.
  • Chill and Serve: Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld together.
    Serve chilled as a dip, spread, or sauce.

Notes

  • Heat Level: You can control the spice by adjusting the number of chipotle peppers you use. For a milder aioli, start with one pepper and remove the seeds.
  • Substitute for Mayonnaise: If you prefer a lighter version, you can substitute mayonnaise with Greek yogurt or sour cream.
  • Flavor Development: The aioli will develop more flavor as it sits, so it’s best to prepare it ahead of time and let it chill in the fridge for 30 minutes or more.
