Instructions
Prepare the Chipotle Peppers:
Remove 1 to 2 chipotle peppers from the can of chipotle in adobo sauce. Finely chop the peppers and optionally add a small amount of adobo sauce for extra flavor.
Mix the Ingredients:
In a small bowl, combine the mayonnaise, minced garlic, chopped chipotle peppers, lime juice, and olive oil. Stir everything together until smooth and well-combined.
Season:
Taste the aioli and adjust the seasoning by adding salt and pepper to your preference.
Chill:
Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld together. The aioli will last for up to 5-7 days in the refrigerator.
Serve and Enjoy:
Serve the aioli as a dip, sandwich spread, or topping for your favorite dishes.
Notes
For a spicier aioli, increase the amount of chipotle peppers.
If you prefer a lighter version, substitute some of the mayonnaise with Greek yogurt for a tangy twist.
The aioli will thicken as it chills in the refrigerator, so feel free to adjust the consistency with a little extra lime juice or water if needed.
Make sure to store the aioli in an airtight container in the fridge for optimal freshness.
