Equipment

  • 1 small bowl
  • 1 spoon or whisk
  • 1 Knife (for chopping garlic and chipotle peppers)
  • 1 Cutting Board
  • 1 Airtight Container (for storing aioli)

Ingredients
  

  • 1 cup Mayonnaise
  • 2 cloves Garlic minced
  • 1 to 2 Chipotle peppers in adobo sauce finely chopped
  • 1 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • Salt to taste
  • Pepper to taste

Instructions
 

Prepare the Chipotle Peppers:

  • Remove 1 to 2 chipotle peppers from the can of chipotle in adobo sauce.
    Finely chop the peppers and optionally add a small amount of adobo sauce for extra flavor.

Mix the Ingredients:

  • In a small bowl, combine the mayonnaise, minced garlic, chopped chipotle peppers, lime juice, and olive oil.
    Stir everything together until smooth and well-combined.

Season:

  • Taste the aioli and adjust the seasoning by adding salt and pepper to your preference.

Chill:

  • Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld together.
    The aioli will last for up to 5-7 days in the refrigerator.

Serve and Enjoy:

  • Serve the aioli as a dip, sandwich spread, or topping for your favorite dishes.

Notes

  • For a spicier aioli, increase the amount of chipotle peppers.
  • If you prefer a lighter version, substitute some of the mayonnaise with Greek yogurt for a tangy twist.
  • The aioli will thicken as it chills in the refrigerator, so feel free to adjust the consistency with a little extra lime juice or water if needed.
  • Make sure to store the aioli in an airtight container in the fridge for optimal freshness.
