Equipment

  • 1 Mixing bowl (medium size)
  • 1 Knife (for chopping chipotle peppers and mincing garlic)

Ingredients
  

  • 1 cup Mayonnaise
  • 2 chipotle peppers in adobo sauce chopped
  • 2 cloves Garlic minced
  • 1 tbsp Lemon juice
  • 1 tbsp Olive oil
  • ½ tsp Salt
  • ¼ tsp Black pepper

Instructions
 

  • Prepare the Chipotle Peppers: Remove the chipotle peppers from the adobo sauce and chop them finely. If you prefer a milder flavor, remove the seeds before chopping.
  • Mince the Garlic: Peel and finely mince the garlic cloves.
  • Combine Ingredients: In a medium-sized mixing bowl, add mayonnaise, chipotle peppers, minced garlic, lemon juice, and olive oil.
  • Mix the Aioli: Stir all ingredients together until smooth and well-incorporated. Add salt and pepper to taste.
  • Adjust Seasoning: Taste the aioli and adjust the heat level by adding more chipotle peppers or lemon juice if needed.
  • Chill: Cover the bowl with a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Serve: Once chilled, serve with fries, sandwiches, burgers, or any dish of your choice.

Notes

  • Make ahead: This aioli is even better the next day after chilling as the flavors have more time to meld.
  • Vegan option: Substitute the mayonnaise with vegan mayo for a plant-based version.
  • Adjust heat level: If you prefer a spicier aioli, feel free to add more chipotle peppers or cayenne pepper. For a milder version, reduce the amount of chipotle peppers used.
  • Storage: Store in an airtight container in the fridge for up to 1 week.
