Equipment

  • 1 medium bowl
  • 1 spoon or whisk

Ingredients
  

  • 1 cup mayonnaise or vegan mayo, if preferred
  • 2 chipotle peppers in adobo sauce finely chopped
  • 2 garlic cloves minced
  • 1 tablespoon fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional:

  • ½ teaspoon smoked paprika for added smokiness
  • 1 teaspoon honey for sweetness, if desired

Instructions
 

Prepare the Chipotle Peppers

  • Remove 2 chipotle peppers from the adobo sauce.
    Chop them finely and remove the seeds for a milder flavor (optional). Set aside.

Mix the Base

  • In a medium bowl, combine 1 cup of mayonnaise with 2 minced garlic cloves and 1 tablespoon of lime juice.

Add the Chipotle Peppers

  • Stir in the chopped chipotle peppers, making sure they are evenly distributed throughout the mayo mixture.

Season the Aioli

  • Add ½ teaspoon of salt and ¼ teaspoon of black pepper.
    If desired, stir in ½ teaspoon of smoked paprika and 1 teaspoon of honey for extra flavor.

Taste and Adjust

  • Taste the aioli and adjust the seasoning to your liking. Add more chipotle peppers for more heat, or extra lime juice for a tangier flavor.

Store and Serve

  • Transfer the aioli to an airtight container and refrigerate until ready to serve.
    Use as a dip, spread, or drizzle over your favorite dishes.

Notes

  • If you prefer a more traditional aioli, substitute the mayonnaise with homemade aioli (egg yolk and olive oil).
  • To make the aioli spicier, increase the number of chipotle peppers or add extra hot sauce.
  • For a vegan version, substitute the mayo with a plant-based alternative.
  • This aioli can be made ahead of time and stored in the fridge for 5-7 days.
