Ingredients
4small flour tortillasor 2 large tortillas, cut into quarters
1 ½cupsshredded cheesecheddar, Monterey Jack, or Mexican blend
½cupcooked chickenbeef, or pork (optional, can use beans or vegetables for vegetarian)
1tbsptaco seasoningoptional, for extra flavor
Olive oil spray or melted butterfor greasing the air fryer basket, 1-2 tsp

Instructions
Prepare the Tortillas
Cut the flour tortillas into quarters (or into bite-sized pieces). If using large tortillas, you can cut them into 4-6 pieces depending on the size of the bites you prefer.
Assemble the Quesadilla Bites
Lay a small amount of shredded cheese on the center of each tortilla piece. If you're using optional fillings like cooked chicken, beef, or beans, add those on top of the cheese. Sprinkle with taco seasoning for an extra burst of flavor, if desired.
Preheat the Air Fryer
Preheat the air fryer to 375°F (190°C) for about 3 minutes to ensure it’s hot and ready for cooking.
Air Fry the Quesadilla Bites
Spray the air fryer basket with a light coating of olive oil or melted butter. Place the assembled quesadilla bites in the air fryer basket in a single layer. Air fry for 6-8 minutes, flipping halfway through to ensure they are evenly cooked and golden brown on both sides.

Notes
For extra crispy bites, spray more oil on the tortillas before air frying.

These can be made ahead of time and frozen. Simply air fry from frozen for 8-10 minutes.
