Breakfast tacos are a quick, delicious, and customizable morning meal made with soft tortillas filled with fluffy scrambled eggs, crispy bacon or sausage, melted cheese, and fresh toppings.
This Tex-Mex staple is perfect for a satisfying breakfast or brunch.
Whether you like them classic or with a unique twist, these tacos are easy to prepare and full of flavor.

Equipment

  • 1 Large skillet or frying pan
  • 1 Medium mixing bowl
  • 1 Whisk or fork
  • 1 Spatula

  • 1 Cheese grater (optional)

Ingredients
  

  • 4 large Eggs
  • ¼ cup Milk optional, for fluffier eggs
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 1 tbsp Butter or oil
  • 4 slices Bacon or ½ cup cooked sausage
  • 4 small Flour or corn tortillas
  • ½ cup Shredded cheddar or Monterey Jack cheese
  • ½ cup Salsa pico de gallo or hot salsa
  • ½ medium Avocado sliced or mashed
  • 2 tbsp Fresh cilantro chopped
  • 1 medium Jalapeño sliced, optional
  • 1 small Lime cut into wedges, optional

Instructions
 

  • Step 1: Prepare the Ingredients
  • Heat a large skillet over medium heat and cook the bacon until crispy, about 5 minutes per side.
    Transfer to a plate lined with paper towels. If using sausage, cook until browned and crumbled.
  • In a mixing bowl, whisk together the eggs, milk (if using), salt, and black pepper.
  • Step 2: Cook the Eggs
  • Heat butter or oil in a skillet over medium-low heat.
    Pour in the egg mixture and cook slowly, stirring gently with a spatula until just set but still soft. Remove from heat.
  • Step 3: Warm the Tortillas
  • While eggs are cooking, heat tortillas in a dry skillet for about 30 seconds per side until warm and slightly toasted.
    Alternatively, wrap them in foil and warm them in the oven at 300°F for 5 minutes.
  • Step 4: Assemble the Tacos
  • Place tortillas on plates and divide the scrambled eggs evenly among them.
  • Crumble the cooked bacon or add the sausage on top.
  • Sprinkle shredded cheese over the warm eggs so it melts slightly.
  • Top with salsa, avocado slices, and fresh cilantro. Add sliced jalapeños if you like extra heat.
  • Step 5: Serve & Enjoy
  • Serve immediately with lime wedges on the side for an optional squeeze of freshness.

Notes

  • Make It Spicy: Add hot sauce, diced jalapeños, or a spicy salsa for extra heat.
  • Vegetarian Option: Skip the bacon or sausage and add sautéed mushrooms, black beans, or plant-based sausage.
  • Storage & Reheating: Store leftover ingredients separately in the fridge. Reheat eggs and meat gently in a skillet before assembling fresh tacos.
  • Tortilla Tip: For extra crispy tacos, lightly butter the tortillas and pan-fry them for 1-2 minutes before filling.
