Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Baking Dish: Lightly drizzle the olive oil in a baking dish (around 9x9 inches). Place the block of feta cheese in the center.
Add Vegetables: Arrange the halved cherry tomatoes and minced garlic around the feta cheese.
Season: Sprinkle the dried oregano, salt, and pepper over the tomatoes, garlic, and feta. If you like a bit of spice, add red pepper flakes.
Bake the Feta: Place the baking dish in the oven and bake for 25–30 minutes, until the feta cheese softens and becomes golden and the tomatoes are blistered.
Add Eggs: Remove the dish from the oven. Carefully crack the eggs over the baked feta and tomatoes.
Finish Baking: Return the dish to the oven and bake for another 7-10 minutes, or until the eggs are cooked to your desired level (7 minutes for soft yolks, 10 minutes for firm yolks).
Serve: Garnish with fresh parsley if desired and serve immediately with crusty bread or a side salad.
