Ingredients
  

  • 200 g Feta Cheese 1 block
  • 4 large Eggs
  • 1 tablespoon Olive Oil
  • 1 cup Cherry Tomatoes halved
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • Fresh Parsley chopped (optional garnish)
  • Salt to taste
  • Pepper to taste
  • Red Pepper Flakes optional, to taste

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Baking Dish: Lightly drizzle the olive oil in a baking dish (around 9x9 inches). Place the block of feta cheese in the center.
  • Add Vegetables: Arrange the halved cherry tomatoes and minced garlic around the feta cheese.
  • Season: Sprinkle the dried oregano, salt, and pepper over the tomatoes, garlic, and feta. If you like a bit of spice, add red pepper flakes.
  • Bake the Feta: Place the baking dish in the oven and bake for 25–30 minutes, until the feta cheese softens and becomes golden and the tomatoes are blistered.
  • Add Eggs: Remove the dish from the oven. Carefully crack the eggs over the baked feta and tomatoes.
  • Finish Baking: Return the dish to the oven and bake for another 7-10 minutes, or until the eggs are cooked to your desired level (7 minutes for soft yolks, 10 minutes for firm yolks).
  • Serve: Garnish with fresh parsley if desired and serve immediately with crusty bread or a side salad.

  • Cheese Alternatives: If you don't have feta cheese, try goat cheese or ricotta for a different flavor profile.
  • Serving Suggestions: Serve with warm, toasted bread for dipping into the creamy egg and feta mix.
  • Vegetable Add-ins: Feel free to add vegetables like spinach, mushrooms, or bell peppers before baking.
  • Reheating: Leftovers can be reheated in the oven at 300°F (150°C) for about 10 minutes or in the microwave for about 30 seconds, though the eggs may firm up a bit.
  • Make it Spicy: For extra heat, add fresh or dried chili flakes, or even a diced jalapeño when adding the tomatoes and garlic.
