Equipment

  • 1 shallow dish for egg mixture
  • 1 shallow dish for breading mixture
  • 1 Large skillet
  • 1 Baking sheet
  • 1 small saucepan (optional, for warming marinara sauce)
  • 1 oven-safe dish (optional, for serving)

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Season the chicken breasts with salt, pepper, and garlic powder.
  • In one shallow dish, beat the eggs. In another dish, mix the breadcrumbs, Parmesan cheese, and dried basil.
  • Dip each chicken breast into the egg mixture, then coat it in the breadcrumb mixture.
    Press the breadcrumbs firmly into the chicken.
  • Heat olive oil in a large skillet over medium heat.
    Fry the chicken breasts for 2-3 minutes on each side until golden brown.
  • Place the fried chicken on a baking sheet.
    Spoon marinara sauce over each chicken breast and top with mozzarella cheese.
  • Bake in the preheated oven for 10-15 minutes, until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (74°C).
  • Serve immediately with pasta, garlic bread, or a side salad.

Notes

  • For a lighter version, you can bake the chicken breasts instead of frying them.
  • Use freshly shredded mozzarella for a creamier melt.
  • If you don’t have Italian-style breadcrumbs, you can substitute with plain breadcrumbs and add a pinch of dried oregano and basil.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
