Instructions
 

  • Toast the Bread: Begin by toasting the slices of bread in a toaster or on a grill pan until golden brown and crispy.
  • Mash the Avocado: While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Use a fork or potato masher to mash the avocado until creamy. Season with salt, pepper, and optional garlic powder or lemon juice for extra flavor.
  • Cook the Egg:
  • For a fried egg: Heat a small non-stick skillet over medium heat, add a little butter or oil, and crack an egg into the pan. Cook until the whites are set but the yolk is still runny (or longer if you prefer a firmer yolk).
  • For a poached egg: Bring water to a simmer in a pot with a splash of vinegar. Crack the egg into a small bowl and gently slide it into the water. Cook for 3-4 minutes, until the whites are set and the yolk remains soft. Remove with a slotted spoon.
  • For scrambled eggs: Whisk the egg with salt and pepper, then cook in a lightly oiled pan over low heat, stirring occasionally until fully set but moist.
  • Assemble the Toast: Spread the mashed avocado generously over the toasted bread. Place the cooked egg on top of the avocado.
