Ingredients
  

  • 2 ripe avocados
  • 2 large eggs
  • Salt - 1/4 tsp
  • Pepper - 1/4 tsp
  • Paprika - 1/4 tsp optional, for extra flavor
  • Cheese optional - 1/4 cup shredded (cheddar, mozzarella, or goat cheese)
  • Bacon bits or sausage optional - 2 tbsp (for topping)
  • Fresh herbs optional - 1 tbsp (cilantro or parsley, for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare the avocados: Cut the avocados in half and remove the pits.
    Use a spoon to scoop out a small amount of avocado flesh from the center of each half to make room for the egg.
  • Prepare the baking dish: Place the avocado halves on a baking sheet lined with parchment paper or in a small baking dish.
    If the avocado halves are wobbly, crumple a small ball of aluminum foil and place it underneath to stabilize them.
  • Crack the eggs: Crack one egg into a small bowl.
    Gently slide the egg into the center of each avocado half.
    If the egg is too large for the avocado, discard some of the white to ensure the egg fits.
  • Season the egg boats: Sprinkle salt, pepper, and paprika (if using) on top of the eggs.
  • Bake: Place the baking sheet or dish in the preheated oven and bake for 12-15 minutes.
    Keep an eye on the eggs to ensure they cook to your preference (12 minutes for runny yolks, 15 minutes for firmer yolks).
  • Add toppings: If desired, sprinkle with cheese, bacon bits, or fresh herbs just before serving.
  • Serve: Once done, remove from the oven and serve immediately, optionally with toast or a side salad.

  • Customization: Feel free to add additional seasonings like garlic powder, chili flakes, or fresh herbs to suit your taste.
  • For a lighter version: Use egg whites instead of whole eggs.
