Ingredients
  

  • 1 Avocado Ripe Avocado
  • 1/2 cup Fresh Cilantro chopped
  • 1 clove Garlic minced
  • 1 tbsp Lemon/Lime Juice fresh
  • 1/4 cup Olive Oil Extra Virgin Olive Oil
  • 1 tbsp Dijon Mustard Optional
  • To taste Salt
  • To taste Pepper

Instructions
 

Prepare the Avocado

  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it well until smooth.

Chop the Cilantro and Garlic

  • Finely chop the cilantro and garlic. The cilantro should be evenly chopped to ensure it's well incorporated.

Blend the Ingredients

  • In a food processor or blender, combine the mashed avocado, chopped cilantro, minced garlic, lemon/lime juice, olive oil, and Dijon mustard (if using).
    Blend until smooth and creamy.

Season and Adjust

  • Taste the aioli and adjust the seasoning.
    Add salt, pepper, or extra lime juice to suit your taste. Blend again if necessary.

  • Transfer the aioli to a bowl and serve as a dip, spread, or topping for your favorite dishes.
