Ingredients
  

  • 1 Ripe avocado medium-sized
  • 2 Cloves garlic minced
  • 2 tbsp Lemon juice freshly squeezed
  • 1/4 cup Olive oil
  • 1 Egg yolk optional, for a richer texture
  • 1/4 tsp Salt to taste
  • 1/4 tsp Black pepper to taste

Optional Ingredients:

  • 1 tbsp Fresh cilantro chopped
  • 1 tbsp Lime juice for an extra citrus flavor
  • 1/2 tsp Smoked paprika for a smoky flavor

Instructions
 

Prepare the Avocado:

  • Slice the avocado in half, remove the pit, and scoop out the flesh into a bowl.

Blend the Ingredients:

  • In a food processor or blender, combine the avocado, minced garlic, lemon juice, olive oil, and egg yolk (if using).
    Blend until the mixture is smooth and creamy.

Season the Aioli:

  • Add salt and pepper to taste, then blend again.
    If you prefer more acidity, adjust with additional lemon juice or add lime juice.

Adjust Consistency (Optional):

  • If the aioli is too thick, add a little more olive oil to reach your desired consistency.

Serve or Store:

  • Transfer the aioli to a serving dish, or store it in an airtight container in the fridge for up to 2-3 days.

  • Adjusting Flavor: Feel free to customize your aioli with spices or herbs to suit your preferences. For a spicier version, add a dash of hot sauce or chili flakes.
  • Consistency Tips: If the aioli is too thick, gradually add more olive oil or water to thin it out. Start with small amounts to avoid making it too runny.
  • Egg Yolk: The egg yolk helps to emulsify the ingredients and provide a smoother texture. However, it is optional if you prefer a vegan version.
  • Storing: Store any leftover aioli in an airtight container in the refrigerator. To prevent browning, place a piece of plastic wrap directly on the surface of the aioli before sealing the container.
