Equipment

  • 1 large mixing bowl
  • 1 measuring cup set
  • 1 measuring spoon set
  • 1 Silicone spatula

  • 1 Small Spray Bottle (for moisture, optional)

Ingredients
  

For the Masa Dough:

  • 2 cups masa harina corn flour
  • 1 ½ cups chicken or vegetable broth adjust for consistency
  • ½ cup lard or vegetable shortening
  • 1 teaspoon baking powder
  • 1 teaspoon salt

For the Filling (Choose One or Mix & Match):

  • 1 ½ cups shredded pork or chicken cooked, seasoned
  • ½ cup salsa roja or salsa verde
  • 1 cup shredded cheese queso fresco, Monterey Jack, or cheddar
  • ½ cup refried beans

Other Ingredients:

  • 12 dried corn husks soaked in warm water for at least 30 minutes
  • Cooking spray or 2 tablespoons vegetable oil for air fryer basket
  • Aluminum foil or parchment paper optional, for moisture retention

Instructions
 

Step 1: Prepare the Corn Husks

  • Soak the dried corn husks in warm water for at least 30 minutes until soft and pliable.

Step 2: Make the Masa Dough

  • In a large mixing bowl, combine masa harina, salt, and baking powder.
  • Add lard or shortening, mixing until crumbly.
  • Gradually add broth, mixing until the dough is smooth, soft, and spreadable.

Step 3: Assemble the Tamales

  • Pat the corn husks dry and lay them flat.
  • Spread 2 tablespoons of masa dough onto each husk, leaving space at the edges.
  • Add 1-2 tablespoons of filling in the center.
  • Fold the sides of the husk inward, then fold the bottom up to seal the tamale.

Step 4: Preheat the Air Fryer

  • Set your air fryer to 375°F (190°C) and preheat for 3-5 minutes.
  • Lightly grease the air fryer basket with cooking spray or oil.

Step 5: Cook the Tamales

  • Arrange tamales seam-side down in a single layer in the basket. Do not overcrowd.
  • Air fry for 15-20 minutes, flipping halfway. If using frozen tamales, cook for 20-25 minutes.
  • If tamales dry out, lightly spray with water or wrap them loosely in foil.

Step 6: Check for Doneness & Serve

  • Check doneness by inserting a toothpick into the masa—it should come out clean.
  • Let tamales cool for 5 minutes before serving.

Notes

  • Make-Ahead Tip: Prepare tamales in advance and store them in the freezer for up to 3 months.
  • Reheating Instructions: Reheat refrigerated tamales at 350°F (175°C) for 5-7 minutes or frozen tamales at 375°F (190°C) for 12-15 minutes.
  • Moisture Trick: If tamales dry out, wrap them in damp paper towels or foil before air frying.
  • Vegetarian Option: Replace lard with vegetable shortening and use cheese, beans, or veggies for filling.
